Just out of curiosity, does anyone know of Muslim / Saracen ranges currently on offer?

The 1/72 or 20mm plastic ones in the HaT "el Cid" range are superb, pictures of a lot of them in my sale thread currently.

I am a fan of their camel mounted troops.  The camel baggage figure is also excellent.

Hmmm, about thirteen centuries of Islam, and a choice of 2mm, 6mm, 10mm (aka the one true scale), 15mm, 25 mm, 28mm, 54mm, and doubtless others. Clarifying what you're looking for might get you more useful advice.

These are available in 1/56 too. The infantry are slim compared to metals and the cavalry seem to be in a slightly larger scale to the infantry. They're ok and dirt cheap compared to metals.

FierceKitty raises a good point about the time scale despite the fitna of claiming 10mm is the true scale.  I have used Sudanese tribesmen from Colonial lines for 13th Century battles by just painting up the figures without firearms as well as some minor modifications.
