No reason "Of Gods and Mortals" wouldn't work for non fantasy skirmish. Just omit the gods section. But there are plenty of generic troop choices to select from...

A variation of lion rampant should work fine. Just re-define the troop types.

If you want Hopolite warfare take a look at the Perfect Captains rules for the period. It is an indepth look at this type of warefare. It is not just push until the other guy gives ground. There is even a campaign game.
