is there a set of rules for playing priest characters
I used to be with it, but then they changed what it was. Now what I'm with isn't it anymore and what is it seems weird and scary.

Depends on what you see as a priest.
Someone who can heal, take the Thaumaturge School.

A D&D-Cleric with Heavy Armor, there ist the "Armor of Righteousness" in Forgotten Pacts, which is the only Mail Armor that can be worn by a wizard.

In the Breeding Pits expansion, there are stats for a Monk soldier type, which could perhaps be interpreted as a priest. Similarly there's a Mystic Warrior too.

It depends what you call a priest. If you are a priest of Set then you don't wear any armour. Typically priests didn't wear armour. It was only a small percentage of militant priests that gave up the protection of the cloth and put on armour and rode about like knights.
