My understanding is the 13thC and 14thC were the era of the chevauchee which sounds perfect for the type of game you want to play.

As you have pointed out 14thC would be fantastic for this type of chevauchee gaming. The scope for inventing scenarios seems pretty limitless at a skirmish-y level games to me.

Capture the witch (re: capture Jeanne d'Arc sound like fun!)

Kind Regards.

You could look at the Siege of Orleans (1428-29).
There were a lot of small actions plus a few big battles. There are lots of characters, and some very interesting military actions.

e.g.
Raids on food
Scouting
Raids on enemy camps
Extensive use of siege artillery
First use of snipers to target enemy commanders
Parts of the city destroyed by defenders, then skirmishes in the ruins.
Caravans of wagons being attacked (Battle of the Herrings was the biggest but there were many smaller actions).
Reinforcements being smuggled into the city
Bridges destroyed and then assaulted with ladders to span the gaps.

All great ideas.  8) 8) 8)

There's a great book available of the Siege of Orleans with a lot of heraldic info too, The Siege of Orleans and the Loire Campaign: Joan of Arc and the Path to Victory (Men & Battles), Stephane Gondoin

EDIT: Forgot the link  o_o:
