Having read through the thread and seen all the suggestions for figure ranges to plunder, the question is: how accurate do you want to be for 1794, and/or do you want your figures to be usable for other, later campaigns?

The book cover illustration looks a bit too 1800+ to me - in 1794, the standard British infantry uniform was much closer in appearance to the AWI version, albeit with standing (or at least rise-and-fall) collars, and would be nothing like the uniforms worn in Egypt in 1801.  Troops sent out from Europe would be dressed slightly differently (and possibly less appropriately) than units drawn from the long-term garrisons of the islands, who could have adapted old coats to single-breasted types (as worn by the 40th Foot at Germantown) and worn the Mother Shipton hat, or something very similar, as concessions to the climate.

The French would be wearing uniforms close to the Ancien Regime style, so the Eureka and Trent ranges would be accurate, but bear in mind that in the Colonies, "les blancs" would still predominate; militia and other colonial units tended to be fairly well uniformed (although using AWI militia for armed civilians is a good idea), the last-named corps having single-breasted coats, as opposed to the double-breasted/lapelled versions of the regulars.
No plan survives first contact with the dice.

Hi Baron, thanks for taking time to comment, great info in your post, much food for thought too, especially re the use of AWI minis as a source to consider  :)
