How do you add the necks?
Smaller beads.  When I do this I usually build upside down with a straight pin as the cork, small bead or two for the neck and the big bead for the body.  Drop of superglue to hold them together and once you clip the straight pin you can use it to pin the bottle to whatever you want.
A bottle of scotch and two aspirin a day will greatly reduce your awareness of heart disease.

Pacarat's bottles and vases are awesome! Bought a set from him some years ago and used them in my Walking Dead houses:





Still have some left and they will surely find a place in my future Walking Dead stuff :)
