Lookin for ideas besides the barrels and boxes, I have done some thinking for my own project and would recommend

coiled rope piles
lobster traps
small boats, rafts
rat swarms
drunken sailors
loading cranes
street lamps
fish netting
oars
broken bottles or trash piles 
seagull nests
walk platforms (planking used for in between docks and ships)
rolled and folded sails and (even masts)
fishmonger carts

Thanks, Ninja, a few there that I hadn't thought of.
I do want to add more character to the pieces, but still need to keep it playable. Will use a few of those ideas, though.
On the subject of rats; I have about 20 small rat-themed options to add to all of my pieces, but will be adding them all together at a later date.

An update;
Legionaire Bert brought his Dwarf Warband over yesterday for a couple of games. I took some photos during the games and will be posting those later, along with a brief rundown of the photos and the situations that caused them.
However, for now I will post a couple of pics taken before we started, showing the layout of the board;

(Please forgive me if they are not up to standard as I am not the best with a camera. In fact, a trained chimp would probably do better, I have to delete at least half of the pictures that I take. I normally leave the taking of pictures to my better half. She knows what she is doing!)

And nice use of the aquarium plants, too. Been wanting to get a whole bunch of those for quite some time, but there's always something more important to spend the cash on...  my wife says...  ::)

This thread is quite an inspiration, Mason! The ground floor of the Green Griffon definitely made me sit up and pay attention. The modeling and painting are equally top notch there. I also saved the pics of the Pegasus Hobbies ruins--really enjoyed seeing what can be done in terms of ruins with those sets.

Spooktalker: Thanks for the comments. Regarding the Pegasus sets; I had better warn you that only two of the sections were built using the ruins set. The other two were made from another set (not sure which one, I think it was either Gothic City 1 or 2). They had to be cut up with a hand saw. It was hard work, but you do get the benifit of using all the pieces that you have cut off as debris. That is where the larger pieces littering the floor came from.

Luckyjoe: Many thanks. Another word of warning for you. I learnt that during the 'wet napkin' process, the more water that you use, the longer it takes to dry. (Probably quite obvious!) The main problem with this, though, is that the water is absorbed by the MDF, causing it to warp a little. It is not obvious in the pictures, but it has happened on a couple of the pieces. My advice would be to do it in two layers with less water, waiting for the first to dry thoroughly first.

Anyone have any good tips for straightening the MDF boards back again?
Like I said, not too serious, but if anyone knows an easy way to do it, it would be worth a try.

Mason: Thanks for the tip about the warping. I'm using sections of cheap vinyl floor tiles for my canal sections so warping is not as big a problem for me, but it still can occur because they're a little flexible. And you're right, it definitely takes them a while to dry. Again, thanks for the great idea and inspiration.

You can straighten it by LIGHTLY misting the back of it with water and applying pressure to the board using clamps on all sides (the more the better). If you have higher humidity you can straighten it without the water.

If possible try and seal the mdf before you add anything water based and you greatly decrease the chances of warping.

Note: if you use too much water the mdf will expand and may cause a result your not happy with!
