The only 1/100 models I'm aware of are from Decapod on Shapeways. They have a small range of WWI planes in that scale;
         Hannover CL IIIa
         Fokker E III
         Sopwith Pup
         Sopwith Triplane
         Pfalz D XII

 They're quite nice, with decent detail, but being prints they're a little pricy at £10-12 a piece (though that's about the same as the Wings of Glory pre-paints). Most of the planes out there seem to be in 1/144 - Wings of Glory scale - if they'll do, there are hundreds.

Had a quick look around and apart from Decapod can't find much. He does a couple of other planes including those mentioned above:

RAF FE2D
Felixstowe F.2a

I use 6mm planes with 15m stuff. Silly as t sounds, it looks OK as the planes are 'further away'.  Massive ranges of 6mm planes for Ww1.

Otherwise the Wings of War planes work fine, although they are hideously expensive.

Didn't Old Glory used to have a range of 15mm planes called Little Flying Fokkers, or am I imagining that?

No problem with using smaller scale planes overhead of 15mm troops on a tall flying stand, you could happily use 12144 or 1/300.  Cheaper too and the choice is pretty good.
