For inspiration, let’s list out some alternate models to add more variety to the existing posses for this wonderful game.
Dagon - not ragged cultists, but southern aristocrats. High society plantation. Not backwater swamp. Could also use a family of old world nobles from the north.
Dark confederacy - a necromancer raising dead gunslingers. So undead Boot Hill not “south will rise again” former soldiers.
Twilight order - Mexican nuns and gunfighters. Heavy catholic bent. Might even work for the sisterhood.
Skinwalker - mountain men and frontier fur traders who caught lycanthropy. Might also work with forsaken rules.
Other ideas that could make use of the vast range of Old West models out there?

Good ideas, and an interesting approach - so thinking about alternative figures for existing posses.
It would certainly be good to have options for Mexican figures, and more options for Indians.
I’ve not got any ideas right now, but like the idea.

The Kin - instead of backwoods hillbillies, a group of mountain men trappers who turn to cannibalism during a harsh winter and become ghouls.
Forsaken - Mexican banditos or members of the Mexican army who become cursed to turn into werejaguars
Sisters of Salem - like you said, could do a mexican catholic slant. Nuns and then a Lady of Guadalupe
Congregation - Maybe an Aztec cult?
-
Vampires - Again, make them Aztec, led by a vampire queen ala Dusk Til Dawn.

I found a whole line of cool Chinese fantasy miniatures from Scotia Grendel. You could do Chinese versions of vampires (hopping vampires!), twilight order, sisters of salem, etc.

Not overpowering aliens for Cowboys and Aliens type scenario, maybe like the Copplestone little grey men.
