What century are you thinking of Harry? The Perry Miniatures stuff is by far the best. You could use all the plastics from their Agincourt to Orleans range for approx 1415-1430 and their Wars of the Roses and European Armies plastics for 1450-1485.

HUGE EDIT- Apologies- for some unearthly reason I was thinking Teutonic Knights! As frank xerox has pointed out the Knights Templar were dissolved in 1312. Please scrub all the references to the Perry stuff as they are all too late. I really don't know what I was thinking; I was very distracted with family issues yesterday.

Please note, I don't own any of the Fireforge miniatures so cannot vouch for their historical accuracy and quality.

If you go to these links the3y will lead you to the Fireforge plastics- any set of which would fit well with a Templar based army- though please note, the Templars would only make up a small minority of any given army.

Yes, knowing what era of Templar would be useful. :)  I know some of the military orders lasted for a long time - Like the Teutonic order for example, I've seen earlier representation of them through Fireforge, while Perry easily covers 1400s to 1450s . :) In any case, Atheling seems to have the best answer for plastics - covering the wide range of what could be used.

Sorry guys the Templar’s were suppressed at the start of the 14th century - 1306?
Fireforge do them but what they’re like i don’t know

Fireforge has a kit called "Templar Infantry" that includes both knights on foot and sergeants.

They look similar to the foot knights pack, which I do have. The poses for that one are kind of stiff, but are not bad depending on how fussy you are. Here are some sprue shots of the foot knights pack. They are solidly for the 13th Century, with full mail and surcoats.

As noted, the Templars were disolved in 1312.  The Perry miniatures are completely out of period for them.  Fireforge are the only plastics that would roughly align with arms and armor for the 1200-1300 period.

Perry could work for Teutonics at Grunwald/Tannenburg, but a very different order.

By the way, I know you are after plastic but CP Models produce a small metal range of  mid/late 13th century Templar and Teutonic Knights that can be bought individually. More expensive than Fireforge but they look very nice.

Thanks chaps, most appreciated. The Fireforge 'Templar Infantry' are the lads I'm after. I'm a big fan of those great bucket shaped helm thingys, they're wearing!

The long flowing capes of the Templar Knights, did they actually fight wearing them?
Seems a tad daft if so, a fleet footed Saracen could flip the thing over the Knight's melon, rendering him defenceless.
