Added Azgaar's Fantasy Map Generator to the list at the opening post, a bit more complicated at usage at first glance. Might offer a bit more options though.

I love Inkarnate, had a subscription for 2 years now. It can create beautiful maps and isn't that hard to use. You can use it to make worlds, regional maps or even battle maps. Here's some maps taken from google:

Inkarnate is a good name drop, Malebolgia. I have added it to the list as well as Wonderdraft

I mean maps of coastal regions, for gaming on with sailing Ships. Would be nice to depict different water depth.

I think that this should be possible to do with Azgaar's Fantasy Map Generator, although I don't know how long you need to fiddle out how things are working there. At the tools there is at least the option 'Routes' which seems to offer options on how to edit searoutes as well. It seems like you can work with an imported height map there and I can see at least three different sea depth levels.

And there are also the QGIS Resources for Mariners if you want to work yourself into it. In case you want to study something related with Geography, QGIS tools are in general something useful to get into:
