Watching a YouTube video of a chap converting a wizard for his Cities of Sigmar force and he showed a CoS decal sheet…
Why is the twin tailed comet still a symbol of Sigmar in a new world? It was his mythology in the old world, but that whole origin story is lost, so the mortal realms somehow know about the old world? How?
I seem to remember some fluff that the iron core of the old world is spinning on top of some city spire somewhere (which seems a stretch), but if that is literally the level of destruction we’re talking here how did any knowledge of the old world survive?

Your first assumption may be flawed: I inferred from your post that you assume the setting makes any sort of logical sense.

From my memory of skimming the AoS second edition rule book a few years ago: Sigmar is a god-king who’s actively involved in running his realm - so I guess he is the one who told his people to paint the twinned tailed comet on shields/embroider it on banners, etc.

It's still sigmars symbol in part because sigmar is still around and telling people to use it - prior to the age of chaos sigmar was one of the gods most active in rebuilding civilization in the newly formed realms. he still remembers the old world and so modelled his new cities on that memory.
Plus I believe there was some mention of sigmar appearing as a twin tailed comet when he clung to the burning core of the old world as it crossed through the void.

Tbh I'm willing to accept so handwaving about this, iconic imprinting and atavistic echoes of association. When people think of a symbol as part of a deity, it becomes part of that God intrinsically etc. Also it's one of gw's most recognizable images, of course they keep using it.
