The one time I used it in D&D I had the central eye letting it magically move through stone and earth as though it was water (so high burrow speed) as well as softening the ground so people fighting on foot that were in range and arc were slowed and at risk of being trapped in the ground as their tried to slog through what amounted to quicksand. Figured it fit the critter better than the usual antimagic cone, and lots of other beholder variants have alternate powers these days. The little eyestalks still had the usual array of zap effects and the dangly orbs gave it the ability to see (but not shoot) through solid rock, making it an extra nasty ambusher. The PCs eventually killed it after a lot of effort and they managed to salvage an orb that let the bearer do the same see-through-stone trick, which saw a fair amount of use for a long while afterward.
