Warriors, as opposed to Hearthguard and Levies. Should they be wearing chainmail, or should they just consider themselves lucky to have a spear, shield and helmet?

That depends on your faction. There is a difference in the quality of armour between these three classes of troops. Of course that could be a shield, a helmet, mail or anything else. Itīs most important that youself can tell your levies and warriors from hearthguard.

I think shield and helmet, is probably most accurate. Leaving mail for Hearthguards.
But most of my Anglo Dane Warriors have mail, thanks to the GB plastic box. So they have spears, while the HG have big axes or swords.

My impression is that levy would mainly have no armour, not even helmets, Warriors would have helmets and maybe padded armour (like in the WF Saxon fyrd or Viking bondi boxes), and hearth guard would have mail and helmets.
Having said that I've seen warbands where all but the levy have chain mail if the warband is based around one of GBs original plastic boxes of either Vikings or Saxons, and the difference between warriors and hearth guard was shown with either different weapons or different paint jobs.
Whatever works for you as long as you and your opponent can tell the difference.
