Could also be a machine shop, bakery, small wholesaler - flowers, veggies, parts, whatever. 
Tailor's sweatshop, butcher, cabinet maker, anybody who needs trucks in & out.

The more open you make it at ground level, the better suited to retail, as you close it up to passers by it becomes implicitly wholesale, industrial or commercial.

Indeed! And the sign is reversible so you can flip it over and make your own on the blank side.

Down the road, would it be possible for us to use parts of the range to make this an 'L' shaped building?

I imagine this would require a modified roof bit, with two "tall" and two "low" sides...

Yes, I think we could pull that off. The walls with the alternating brick ends can be used to make an "inside" corner. I'll try assembling one and see how it goes.
