Best? That is rather subjective. There is no one stop shop for this tbh.

Plastic kits for the period can be found, but are a bit limited, but more suitable ones are being released. In resin you have more choice, but also bits here and there. Bryan from the Hobbyden does some nice kits for the Israelis in that aspect, upgradekits for PSC halftracks as well and he is expanding. Liberation has quite a few miniatures for it but comms with them can be hard. He has stuff suitable for the Egyptians/Syrians too.

A few years back I would have said stick to 15mm for this period, but with what is coming in the future 20mm wise, there will be enough to keep you busy.

Do you have any particular battle or unit in mind?

No, not really, I don't know enough about the period, just bought some very nice figures/vehicles, ready to roll!
What I want most are some personality type figures to make a couple of command bases. The rules we're using are a variant of Neil Thomas's 'One Hour Wargames', with a house rule that a command element can join a unit and lower the damage to it... kind of want these to stand out a bit!

Ah, gotcha. Maybe break out the greenstuff or Oyumaru and get creative? If you take a 20mm Russian officer with a cap you could either behead him or copy it and place in on a chap with an AK for an generic Egyptian/Syrian Officer. Same for a Israeli, but with a beard and yarmulka and prayer cloth thingie. Ok, maybe a tad stereotype, but it does stand out. Or copy Moshe, shave off most of ones hair and add a eyepatch.  Experiment a bit, it's not really all too hard, just some greenstuff and a toothpick will go a long way and create the unique command element you are looking for. Command base additions like a radioman or radiojeep, or a piece of captured enemy equipment also work. Or a (enemy) flag. Or find a wrecked kit of a Mirage or Mig-21, rip off a wing or tailsection and base your command around that.

Storebought troops tend to be pretty generic, but some time and work can really change a figure into something unique. Give it a try.
