Depending on how you want to go... There's a fraternity amongst the ASOIAF'ers that like to take inspiration directly or almost exclusively from the books, the good Captain and I amongst them, and those who really like the look of the series, and those who just like the setting and mix n match.
However, be warned the Wiki does not always display the heraldry correctly (bends the wrong way round, chevrons upside down etc.) I find these obvious details jar, but that's just me.
Plus the Wiki versions are drawn from a host of semi-canon sources which make embellishments and attributions not found in the original books, but hey its fantasy so pretty much anything goes.
Personally I think the best thing about this 'period' is I don't feel intimidated if I get the details wrong, because there is no 'wrong' way to visualise it. You'll have more freedom to stage epic battles in 15mm than us 25mm'ers! In 25mm sticking to 12 figures per house doesn't sound much, but I'm currently working up to completing a 12 House Westerlands army, which is looking like A LOT, and that's not counting the cavalry!...
