Knife? No... Dremel with tungsten carbide burr

Need to rethink the paint, it really needs something fine textured.

OK Need some help on paint.
I don't like the cream colour, I'm thinking light grey (Aged limestone) and airbrush black/dark brown as soot.
I need to pick out a few blocks and obviosuly all the damage in lighter colour.

Any suggestions?

I remember Koln cathedral being soot over grey, but I do not have any photographs to hand.
