Don't forget that even classical sculptors have distorted proportions to make a statue appear more "correct" to the viewer - Michelangelo's David is in fact one of the most famous examples of this, as it was intended to be seen from below and so has an oversized head and hands (now where else have I seen those particular features emphasized?).

There's a very, very long tradition of trying to balance pure accuracy and "looks right".

 I am far and away no expert, I agree, but this having done a quick search on the subject and read some previous discussions, this.
