I've read a bit about the tanks and tank destroyers the Romanians used. Currently I'm a bit more curious about trucks, artillery tractors, and the like. They don't tend to add much in terms of gameplay but I always think it's fun to add some transports to an army.

True, if nothing else they make great background and terrain. Even though most of the time you would leave the trucks and wagons a mile or two behind the lines.
I would like to make or find a German field kitchen. And pick up a support wagon or two to represent the Allies overrunning a German camp or rear area. A few un-maned damged anti-aircraft guns or arty will also fit the bill.
I bet you could get away with a few Soviet tanks and tractors to represent repurposed captured equipment.
And I am sure old school wagons would work just fine for support of Romanian troops.
