Which set have you found the best, for wot you want from Wild West games?
We'll start with FFofL and What a Cowboy.

I really like Dead Man's Hand!  Dracula's America is really good too without the magic stuff.

I've not played WAC, but I have played FFoL several times.  So, it's FFoL by default....

As a side note, I've also played Dead Man's Hand and Gunfighters' Ball.  And I prefer FFoL, by a slim margin.

The Gentlemen of Much-Piddling are currently enjoying a 6 game campaign of What A Cowboy! Game 5 has been completed, leading to the big showdown in town for game 6. We are having a great time with it.

TSR's old Boot Hill by default. 
 
Don't play Wild West often enough to have gone looking for other rules.
