Alternative Armies have mushrooms in their HOT107 Encampments 15mm Fantasy Scenics and HOT108 Woodlands 15mm Fantasy Scenics set.

You can buy the mushrooms separately if you don't want the rest.

They are very soft & can easily be filed, squeezed, cut etc.

I own a lot of the plastic plant sets by Busch Modell for railroads. Their mushshrooms are a bit small but might work well if you don't want to go overboard with gigantical fantasy mushrooms. they are part of the "Farne und Pilze" (ferns and mushrooms) set.
