Some New Zealand towns did indeed look quite "Wild West", though this look was more evident for the gold towns of the later 1800s, particularly in the South Island.  Take Arrowtown for example:

So, while still not strictly correct for earlier North Island settings of the NZ Wars, a Western terrain board would suffice with a stretch of imagination.
But if you want to be more accurate than that, then take a look here for a better idea of NZ buildings that were more likely to be encountered in the North Island during the wars:

Got to have a game on this board on Sunday. Eight people with 3 figures each, using Rules with No Name.  Lots of fun and it did come down to last man standing.  Of the rest, almost all surrendered or ran away.  The terrain was fantastic.  Two 2'x4' boards make up the town. Many of the buildings are "cut off" flush with the table edge, effectively making them false fronted, which adds to the illusion of size.  A brilliantly thought out terrain piece.  I took some photos which will be posted shortly.
