Those look great.  To add some color, you might paint (and then weather) the original truck parts peeking out, such as the fenders, running boards, and wheels.

I quite like it but I'll leave the other one  as it is.

I definitely second the suggestion to repaint the few "original" parts that weren't covered by armour plate (fenders, etc.). I think that will provide the exact touch you're looking for. A flat colour, plus maybe an alternate-colour pinstripe and some weathering.
