In general you will find the troops from Wielko Polaska in grey German uniforms with special Polish characteristics like the rogatywka, the four-cornered cap known from the Napoleonic period.
Then you has the Haller Corps raised in France in French uniforms.
Along the Eastern and Southern borders you find uniforms and equipment influenced by Russia and Austria.
1919 a national Polish uniform was introduced, very much like the uniform of 1939, English-brown with rogatywka cap. But very few regiments got it, before the war was ended.
Almost all varieties and colour uniforms existed, same goes for equipment and weapons - except for British.
More about Polish uniforms 1917-1921 will be put up on the site of Studio Siberia, when time permits.
