I have a minotaur coming from the Heresy Kickstarter (I think. It's been a while since I confirmed what I wanted).

The spiders are some of Poundland's finest. I haven't tried to paint them yet, but they're creepy enough as is.

I have some old Grenadier Dragons, but they're still in their boxes

The biggest omission I noticed from my collection was a Giant. I have the old Grenadier Giant Skeleton, but no humans. Something that I may have to remedy at some point, methinks :D

I'm kind if curious how a giant figures into dungeon crawling anyway. I have a plastic GW giant (good model, not as overly embellished as later large monsters) but that thing would be huge in a dungeon, how high must the roof be.

I also plead guilty to the full set of those (and a lot more), although things like Wyverns, Dragons and Griffins I only use small (young or immature in game terms) versions in Dungeons. Bigger ones and Giants are only used in wilderness encounters/games.

If you are looking at dungeon gaming make sure you consider "neutral" creature types that attack by chance not design. Things like fungi, moulds, slimes etc. Not every danger in a dungeon should actively be hunting the characters.

Everything but an Owlbear. Now that I'm a grown-up and I know what I want in life, my collection is Middle-earth-themed, but I still have some "D&D nonsense" from my foolish youth.

No wyvern, giant spider or owlbear.

Seriously an owlbear?  Who would have one of them except a completest D&D player.  Was there ever a stupider monster ever created?  (OK yes there were many, I have the Fiend Folio, but that surely is the poster child)

Implying you wouldn't buy this:

(I'm seriously considering buying it just because the cubs look so much like my cats. :|)

Depending how you define/envision them (Shades of 1st edtion AD&D) there is some overlap between Ogre/Troll in my fevered imagination.

25mm from the 1970s:
Goblins
Orcs
Men-at-Arms (Humans)
Zombies
Ghouls
Lizardmen
Ratmen
Cave Spiders (human sized, not gigantic)
Vampire
Troll
Ogre
Dragon
Giant
Mage
Stone Golem
Ghost
Cave Spider (Large)
Wraith

dumping a bunch as I convert to 15mm

Speaking of 15mm:

Goblins
Orcs
Men-at-Arms (Humans)
Lizardmen
Troll
Oge
Giant
Mage

I'm kind if curious how a giant figures into dungeon crawling anyway. I have a plastic GW giant (good model, not as overly embellished as later large monsters) but that thing would be huge in a dungeon, how high must the roof be.

The game can be played in large caverns, open spaces etc.  It is not a strict dungeon crawl and will be at the discretion of the party/DM.  The heroes will have to use the dungeon to their benefit (dungeons will be encouraged to offer 2-3 routes to various locations).  The dungeon master may be very limited in where he can place/use certain creatures, such as the Giant.  But in some of my dungeons I have huge cavern areas...and sometimes you may stumble into one.

There is a dungeon deck which includes creatures, traps, events, treasure, environmental effects, and special strategies for the Dungeon Master.  Some of the creatures are neutral and will fight heroes and other monsters etc.  The Dungeon Master will play against the character party (with a co-op version I'm hoping to eventually try as well --- allowing AI to control the dungeon.  This would be a very different game, but we'll see).  The Dungeon Master draws a Dungeon Card each turn that the heroes are not fighting a monster --- placing them face down in rooms/areas of the dungeon.  The Heroes will be attempting to locate objective rooms or side-quest rooms.  The faster the characters move and explore rooms, they negate the Dunegon Master placing cards in those rooms...so there is a bit of a race between characters and the DM.  All of this will be laid out when I start the proper thread.

I've got a ridiculous amount of everything with many more monster types than I probably ever need (don't tell my wife) and am still hoarding :)
Why aim for gold if you can get lead?
