TAG have some figures in their Polish Range - Krakow Militia - which are perfect for the period and location you have in mind (being "german" ie non-poles, usually germans, danes, swedes or scots and so western in costume rather than kaftan wearing polish haiduks). There are colour plates in the excellent Osprey books on the Poles which show the costume (used as the basis for the painted examples on the TAG site) which is more "flamboyant" with bigger hats and more lace etc, than the later mid century TYW/ECW figs out there. I'd go with these fellows!
Foundry have an Elizabethan range as do Vendel. In 15mm Essex used to have an Spanish range which was quite nice, but these seem to be mid 16thC.
