That's an amazingly neat paint and subtle job on Sir Jean but it looks as if he's cropped the ears on his poor horse. Probably with some enthusiastic swinging of his axe. 
How did you get the shape of the 5 dots, they appear to have flatish edges as if you painted a big splodge of yellow and then overpainted with dark blue, if so that seems a very clever way of doing it.
Yes, the ears bug me too, badly defined on the casting I am afraid. I’m too lazy to bulk them out with Greenstuff.
The flowers are trial and error, lots of practice and repainting. The secret is thinning the paint and lots of layers to build up the colour. If the paint is thin and you are not happy with the charge when you first paint it Just wipe it off and start again. If you don’t thin your paint you won’t be able to do this and the surface will have a build up of uneven layers with each failed attempt. I have learned this the hard way.

First the darker base coat of blue on the whole figure, I use the Foundry triads, Then the first coat of yellow, dotting in the circles. Then a tidy up with the dark blue base coat to try and get the spacing correct etc. Next a lighter dot of yellow. Whilst that is drying I paint in the mid coat of blue on the whole model, carefully filling in around the circles. Next a final dot of the yellow highlight and the blue highlight on the raised areas.
A good mat varnish helps to flatten everything out and bind the colours together. I am no expert and there are plenty of people out there who can paint these way better than I can, but I’m happy with the results. They certainly look good on the gaming table en masse.
