The only comprehensive work on Danish colours is:
BRUHN, HELGE. Dannebrog - og danske Faner gennem Tiderne. Jespersen & Pio, København 1949.
Else one has to search in other works to compile informations on the subject.
I think, it is 1784 all colours are renewed in the Danish part of the Army, and many of the old ones were then sent to be used in the Norweigian Army, which means many of the former colours used in Denmark can be found in the Norweigian work "Fanekatalogen".
I do not know any specific work on your subject, it will have to be pieced together.
On organization, I think the easiest source, is to take the information from:
VAUPELL, OTTO: Den dansk-norske-hærs historie. I-II. Kjøbenhavn 1872/76. Gyldendalske, for mere detailed information, but the answer by traveller maybe covers your need.
PETERSEN, KARSTEN SKJOLD. Geworbne krigskarle. Hvervede soldater i Danmark 1774-1803. Museum Tusculanum Forlag, København 2002. is a good and comprehensive work also covering the period you is interested in.
On the uniforms of the period there are SKJOLD PETERSEN, KARSTEN. Den danske hærs uniformer i 1700-tallet. Tøjhusmuseet, 2005, a useful booklet and more detailed by same author are series of articles in the Danish magazine "Chakoten" and in the Norweigian yearly "Årbok" from Norsk Våpenhistorisk Selskap.
