The Templars would later be very helpful in maintaining neccessary order in later crusading forces, and would arrange crusaders into Roman style 'centuries',

It happened even earlier than that. Fulcher of Chartre already talked about "tribunes and centurions leading cohorts and centuries" at the Battle of Dorylaeum.

My main focus is 15th century HRE, but the Teutonic order started heavily investing in mounted crossbowmen fairly early, I forget the name of the author but Verbruggen references one of the church leaders who had done some study on the eastern threat citing crossbows as the best option as they had the stopping power to bring down horses.
