Here's a good resource for basic Soviet and German platoon level TOEs:

Soviet:

Panzer Grenadiers:

Typical Soviet platoon is 3x squads of 10 men each - Squad leader with SMG, Asst Squad Ldr (rifle or SMG), LMG gunner, Asst Gunner with rifle, 6x Riflemen. If its a Tank Rider unit or Assault unit you'd have more SMGs. The platoon command unit will likely have a platoon leader, senior NCO, a medic, possibly a sniper, and several runners.

The German squad is similar in composition. Support weapons may be available such as AT weapons, MMG or HMG, etc.

Thanks John. That is exactly what I was after for the infantry squads. I will have a look around that site to see if there is any more info on scout/recon squads.
