Varnishing a tank using a brush?

I've been painting 28mm for the last couple of years. I'm now starting out on a Flames of War project, my first time painting 15mm and my first time painting vehicles.
Is there any reason why I could not use brush on varnish for my tanks and other vehicles (I use Daler Rowney soluble varnish on my 28mm). Seems that everyone uses spray varnish, and I'm wondering if there is a reason for this, other than it being a time saver? I have a bit of an aversion to the idea of using spray varnish, having read so many horror stories of peoples miniatures being ruined after using it.

I always used to brush on my Humbrol matte enamel varnish, and never had any particular issues -- the stuff in the tinlets, not the bottle, which wasn't properly matte when I tried it. I've found that brushing acrylic matte varnishes tends to leave a satin, rather than matte finish; I don't usually get that when spraying (unless I've neglected to stir the varnish sufficiently).

I tend to brush a coat of gloss varnish (for strength) and spray a final coat of Army Painters anti-shine for looks.
