I know it's futile  to tell the would be comedians that I have heard all the standard jokes  about my favorite scale  (1/600th) for aircraft since before it replaced my previous favorite scale (1/300th) - same "jokes" with different numbers - so I will just proceed to the request.         

I am looking at the WW1 1/600th aircraft and I see a strong British/German preference in available castings even though France supplied the majority (or the largest plurality, depending on sources,) of the allied effort.

Given my leaning to the French, (after Spanish, American Indian, Mexican,and American, of course,) for all/almost all historical eras I finding challenging to see any hope of having French aircraft in 2012 for WW1 fights unless I convert or scratch-build them.  I think it would be best to start with current castings and try to make French conversions as my first efforts.  My list of candidates I want to convert starts with the (not in strict order) following:

Morane-Saulnier Type N

Nieuport Nie.11 (Bebe)

Nieuport Nie.17

SPAD VII

Breguet Br.M5

Caudron G.4

Farman MF.11 Shorthorn

Voisin Type 5

Those who (more) familiar with the  current WW1 castings on the market are asked to suggest candidates for the models to attempt to convert to the above.

I have some 1/300th WWI planes and some 1/600th WWII aircraft.  Among those are early war biplanes.  Are the WWI aircraft a bit fiddly when it comes to assembly?  I looked at 1/600th just for cost reasons alone but was worried about assembly.  How tough is it?  How long is assembly?  (My WWII biplanes are purchased just still in the bags I bought them in)
