I've read Herodotus. Now that that's out of the way, do people actually think the Achaemenid Immortals wore scale corselets? Is there any solid archaeological evidence?

I think they wore them under their robes, so you can't see them.
I seem to recall Duncan Head giving some evidence to that effect.
I'd imagine that living in a hot climate it makes sense to cover metallic armour as the crusaders found out much later.

Herodotus mentions scale armor for all Persian foot, not just the "Immortals". I don't think there is any direct evidence for scale armor. Most Greek vases show Persians in Hellenistic linothorax. This may be artistic convention, or a style of armor adopted by the Persians after the war.
