Some stone forts have jutting out pieces to stop ladders. You can't hold a long ladder high and place it against a wall, they're too heavy and unsteady. So you run up with several people, set it against the wall, then slide it up. A projection prevents that working.

However, that said, they only have to be small projections.

I am wondering if it was to protect mud brick from the elements, particularly rain.

I do have a vague memory of a very old film. It might
have been based on USA's 'conquering' the Philippines.
The yanks are held up in a fort. Gaps in the main walls
have been filled with mud bricks. They struggle as they
have no water, then it rains. Everyone is ecstatic, apart
from the commander who says, 'How long will the wall
stand?'
