I think the surprise revealed during the shootout at the end of "Quigley Down Under" is pretty great: won't ruin it for those who haven't seen it!

"The Good, the Bad and the Ugly"'s finale is classic, but it's hard to beat "The Wild Bunch"'s carnage.

All the other ones mentioned are great, but I've got to agree with you guys about the final shootout in Open Range - superbly done.
