Osprey do/did one, but its names escapes me at the moment.
While searching for it, I came across a
scribd page that I hadn't seen. It claims you can download it and other books of a similar nature. I've never used scribd, so I'm not sure if there is a cost or not.
Andrea Miniatures did a couple of books, not sure if they still do. They're for 54mm, but techniques still apply.
There's another one, whose name also escapes me (it's on my bookshelf, but I'm at work) where a bloke sculpts a 90mm figure from scratch.
There are a number of clay sculpting books out there. Much larger scale, but the process could be useful. There's a new clay sculpting book from 3d Total -

I have the Kindle version of Anatomy for Sculptors, although I don't see if offered on Amazon any more.
I'll have a look around my bookshelves, as I have probably purchased most sculpting related books at one time or another - although sadly you wouldn't know it from my output
